Bean to cup

Four stops, about two weeks

  1. 1

    Sourced

Green coffee from three importers who pay farmers well above the market price. We cup every lot before it comes home.

  2. 2

    Roasted

Twelve kilos at a time on Pine Street, every Tuesday and Friday morning. You can smell it from the bike path.

  3. 3

    Rested

Beans rest four to seven days so the flavor settles. Nothing goes in the grinder before it is ready.

  4. 4

    Poured

Weighed, timed and tasted every morning before the doors open. If it is off, we dial it in again.
